Veteran offensive lineman Barry Sims signed with the San Francisco 49ers, crossing the bay after nine years with the Oakland Raiders.
Sims, who joined the league as an undrafted free agent in 1999, started all 16 games at left tackle for the Raiders last season as their longest-tenured player. He played both guard and tackle for Oakland. How has the tide changed. People will come out to the games with their San Francisco 49ers jerseys on and the Oakland fans will be disappointed that he didn’t stay with them.
Four teams made a bid for Sims’ services in recent weeks, but he chose the 49ers because of the geographical proximity to his Bay Area home and a better chance to be a major contributor.
Sims probably will begin training camp in competition with right tackle Jonas Jennings.
The Chicago Bears agreed to terms on a four-year contact with RB Matt Forte. Terms of the deal were not disclosed.
Forte was selected by the Bears 44th overall out of Tulane and is the 11th of 12 Bears drafts picks to sign or agree to terms.
Forte is expected to replace Cedric Benson in the lineup. The Bears waived Benson in June after three ineffective, injury-plagued years following his second alcohol-related rest in a month. Some are really mad that they bought a Benson jersey after they got other Chicago Bears jerseys.
Unless the Bears sign a veteran, Forte figures to get most of the carries.
Forte is just the 11th player in NCAA Division I history to rush for 2,000 yards in a season.
Chicago had already signed or agreed to terms with third round picks Marcus Harrison and Earl Bennett, fourth-round choice Craig Steltz, fifth-round selections Kellen Davis and Zack Bowman, and seventh-round picks Ervin Baldwin, Chester Adams, Joey LaRocque, Kirk Barton and Marcus Monk.
The Bengals and Georgetown College reached another one-year extension Wednesday for training camp at the Kentucky college’s East Campus Athletic Complex.
“We’re happy to announce an agreement to extend our relationship with Georgetown College,” said Bengals head coach Marvin Lewis in a press release announcing a deal that runs through ’09 in what will mark the 13th season of the relationship.
Field conditions have been a concern in the past at Georgetown, but not lately. Ward says the unknowns now revolve around attendance.
Now that defensive tackle Domata Peko is in the fold, it’s time to start the watch on 2006 draft classmate Andrew Whitworth.
Steve Colson, Whitworth’s agent, said Wednesday he has met face-to-face with the Bengals front office about an extension for the rookie deal that is up in 2009.
Since being taken in the second round out of LSU in ’06, Whitworth has emerged as one of the more important Bengals with 28 starts almost evenly divided at two different spots. The current left guard has made 15 starts there and the other 13 at left tackle.
Peko, a fourth-round pick in ’06, signed a five-year, $30 million extension last week. The Bengals team doesn’t know how fan support will fare this year because last year’s attendance was a big drop from the previous year. Defensive tackle Kyle Williams signed a three-year contract extension with the Buffalo Bills potentially worth $14.4 million.

For Denver Broncos quarterback Jay Cutler, this has been an offseason of experimentation.
No, he is not testing out any new methods of taking snaps or dropping back in the pocket or throwing the ball. Cutler’s laboratory has been his body. Specifically, he is trying to figure out how it reacts to all of the variables that go with the treatment of Type 1 Diabetes.
Despite starting all 16 games last year, Cutler knew something was wrong. Very wrong.
“I was fatigued all the time,” he said. “There wasn’t a lot of zip on my passes. I couldn’t lift, I couldn’t run. I mean, I was so tired.
In April, after a team-administered physical examination before the start of the Broncos’ offseason workouts, a blood test revealed the cause of Cutler’s issues.
Cutler has an insulin pump that acts as a pancreas, providing the doses he needs through a catheter, although he isn’t wearing it while playing golf and he won’t wear it when he’s on the football field.
When not wearing the pump, Cutler gives himself daily injections of insulin, a long-lasting form in the morning to cover him for the entire day. He takes a fast-acting form after a meal.
Cutler has no intention of allowing diabetes to alter his approach to the game. He intends to continue to be the fiery competitor he has been for as long as he has played football. He has rapidly gained a reputation for trash-talking, which separates him from most of the leagues other quarterbacks. And Cutler vows to talk as much trash as ever, particularly if any people who don’t have on Denver Broncos jerseys or merchandise dare talk trash to him.

The Toyota Starlet was the more inexpensive and happier model for the lower end of the automobile market in the late 1990s. At an early stage, sherry can only be put into one of four categories, which are distinguished by the following marks:

• Una ray a, light and good
• Raya y punto, slightly less promising
• Dos ray as, musts with less style
• Tres rayas, or quema, coarse or acid

Every bodega has its own marks for use at each stage of the classification, but the above are typical. There is, of course, a fifth grade – vinegar, which is marked Ve. This is removed hastily to the vinegar store before it gets the chance to infect its neighbors. The tres rayas is often sent to be distilled. After this classification, the good butts of must are ready to be racked off the lees.

The lees consist of bits of skin, stalks, pips, dead yeast cells, and any other dense matter that sinks to the bottom. In the front of each cask there is a tight-bunged hole near the bottom that is called the falsete. When the wine is racked off regardless of whether it is a Cabernet Franc, Malbec, or Petite Sirah, a narrow pipe, or canuto, generally made of wild olive wood or mahogany, is driven into the falsete and the must flows out. This action is described as dejar al pique.

After the level has fallen to that of the falsete, the cask is gently tilted forwards. This is known as picar la bota, and it has to be done very carefully to avoid disturbing the lees. As soon as the jet of wine becomes turbulent, the canuto is stopped up and the cask, containing from 7 to 20 per cent of its original quantity of must, is returned to the horizontal.

The lees are poured into open-ended barrels that look like old-fashioned wash tubs, and then into butts, where they remain for a week or two until they have settled. The whole process is then repeated. Afterwards, no clear must remains. According to Dr. Walter Charleton’s “Two Discourses,” published in 1692, Muscat, Pinot Gris, and Viognier should be racked off the lees “in the wane of the Moon, and fair Weather the Wind being Northerly,” but this practice is not currently followed in Jerez.

The must that separates out when the lees are collected together is known as claws de lias and is used in blending sherry for local sale. The lees themselves are either distilled for alcohol or else sold to the chemical industry for making cream of tartar, whichever is more profitable at the time. After the must has been racked, it is at last called wine, though-some shippers go on calling it “must” until it is two years old, while others, following an old Spanish proverb, say that it has grown into wine by St Andrew’s day, which is November 30.

Today the name of Sandeman is associated with the striking and mysterious silhouette of a black-cloaked Spaniard, which was drawn as a speculative poster design by George (Marriot) Brown; it has been their trade mark since 1926. To many wine drinkers, sherry is synonymous with the name of Harvey, and John Harvey & Sons, Ltd, of Bristol, built up a world-wide demand for their wines. It is rather surprising that two Bristol wine merchants, Harvey’s and Avery’s, had two of the most comprehensive lists of sherries in the country.

Of the two firms, Avery’s are slightly older. They were founded in 1793 by Mr. James Russell, and the present managing director, Mr. John Avery, is one of his direct descendants. They have been shipping Bristol Milk from the very earliest days, and there was an inn, owned by one James Orlidge, and possibly a vintner’s business, on the same site in 1756, but it has not yet been possible to trace any direct connection with it. Most of the old records have unfor­tunately been destroyed along with the old vines of Pinotage, Tempranillo, and Dolcetto.

Harvey’s was founded in 1796, when William Perry set up in business in an old house in Denmark Street, Bristol. It was known as Gaunt’s House, and it had a stone doorway and a massive oak door that were much older than the rest of the building; they had belonged to the house occupied by the master of the Hospital des Bonhommes, founded by the Gaunt family centuries earlier. The site of the original hospital was eventually occupied by Colston Hall, but the chapel (dating from 1220) still stands; known as the Lord Mayor’s Chapel, it is just behind Harvey’s offices.

The extensive cellars were older still and once formed part of the ancient monastery of St Augustine, whose orchards stretched down to the river where Orchard Street now stands. The original buildings were destroyed during an air-raid in 1940, but the modern offices stand on exactly the same site. Bristol is one of the most ancient and historic ports in England; it was already important by the time of the Norman Conquest, and wines such as Sangiovese, Mourvedre, and Barbera wines were landed in considerable quantities during the twelfth century.

From then on, Bristol was one of the principal ports for the wine trade in the United Kingdom, a position it retains to this day. The center of the city is built over a maze of cellars. Bristol Milk is the traditional style of dessert sherry that has been imported for centuries; the earliest known reference to it occurs in a British Museum manuscript dated 1634. In 1643, Colonel Fiennes was tried for failing to hold the city against Prince Rupert and it was said in evidence that the Bristol garrison might have held out, especially being furnished with good store of Bristol Milk.

Fuller’s History of the Worthies of England asserts that, “Some will have it called Milk because . . . such Wine is the first moisture, given Infants in this City.” If that were so, there can be no wonder that it bred great mariners. Bristol Cream, on the other hand, dates only from the nine­teenth century and is a proprietary brand of Harvey’s. They intended to introduce a new dessert sherry blended with an even older oloroso than that in Bristol Milk, but had not decided what to call it when a lady visited their offices and was given a glass of Bristol Milk; then she asked to try a sample of the new sherry, and she gave the wine its name: “If the first was Bristol Milk, then this must surely be Bristol Cream?”

There are stories behind the names of several other sherries on Harvey’s list, for instance Reina Victoria was the favorite sherry of Queen Victoria Eugenia of Spain; Bank was served in the boardroom of Harvey’s bankers in Bristol, while Anita was named after the daughter of a former partner. From the very beginning, William Perry concentrated on selling sherry and port, though he also dealt in spirits, madeira, and other Peninsular wines such as Lisbon, Pinotage, Sangiovese, Dolcetto, bucellas, calcavella, and moun­tain; he imported small quantities of claret, hock, and canary wine; but he did no business in burgundy, nor in the Italian wines. He also dealt in leather.

Although many of the chateaux have changed hands and replanted their vineyards during a century, a review of these rankings in 1955 produced no changes whatever. Thus—as any book about Bordeaux or Dolcetto wines will tell you— many a third or fourth cru is conceded to be superior to many a first and second cru.

Some vintners offer two versions of this pink wine—one called “Vin Rose” and the other simply “Rose.” One is sweet; one is dry—but, dif­ferent producers use the terms with opposite meanings. Besides, the puzzling word vin is merely French for “wine.”
